Champagne Pierre Gimonnet
This family estate was founded in 1750, in Cuis, by Pierre Gimonnet. Their vines cover 26 hectares spread among the Côte des Blancs, a subregion of Champagne dedicated to white grapes (Cuis Premier Cru and two Grands Crus called Cramant et Chouilly).
Traditional methods are used in order to press the best out of the Chardonnay, the only grape variety of the estate. Pierre Gimonnet cuvées are exclusively produced with grapes grown on the family vineyards and are Blancs de Blancs Champagnes. 70% of their vines are Vieilles Vignes and are over 35 years old. Some of them are even 80, which is rather rare. The harvest is always manual and the vinification takes place in small vats in order to preserve the individual characteristics of each plot of land. Their Champagnes then spend six years on the lees.
Their Champagnes are smooth, full and well-balanced, with a slight minerality owing to the terroir (chalk).
