Bollinger Champagne, Récemment dégorgé is a special cuvee of Brut- 1995.

Only the greatest of vintages of the Grande Année Bollinger may be part of the selective list of “R.D.” For thoses vintages, time lasts longer. It slowly grows and structures the wine which creates and spreads its aromas. The purest and the deepest truth of wine evolve, mixing astonishingly a great freshness and a second and third level of aromas’ revelation. Freshness will surprise you while you will find the aromatic expression intriguing.

Vinification : During vinification, wines are very light on sugar. It is an old oak barrels’ vinification. After being pourred into bottles, the foaming and slow maturing of wine are under the protection of the cork in order to avoid oxidation. And it also preserves the freshness. The wine maturing on dregs lasts at least 6 years and sometimes more. After manual stiring, the Bollinger “R.D.” has a symbolic low level of sugar: 3 to 4 gr of sugar per litre.
