Xeres

White wines from Xères are original appellation, since 1977. They are produced in Jerez de la frontera, south Andalousia.
Historically, this region is located between two religious worlds: Christians and muslims, -the region was conquered and occupied by Moorish people from 711 to 1264. Vineyard was carrrefully taken care of in this place…articles written about "taking care of vines” have been discovered.
Brought to England as Sack or Sherry, Xérès wine had a special deal going on: Vintner's Company, which allowed a few places in England to sell it without a licence, since 1565. It was and remains a very appreciated wine in England. Even Shakspeare writes about it in Fallstaff.
At the 18th century, few merchants from the british empire islands settled in the region to produce xérès wine. In 1868, 42 grapes varieties were used to produce it.
With the appellation of origin, wines are meant to be vinified for 3 years in barrels. Since 2002, there are different ways to mention maturity.
V.O.S. stands for more than 20 years of growing and V.O.R.S is more than 30 years old.
Palomino fino is a mellow and original wine. Pedro ximénez is a grape dried to let the sugar out. Several xerès exist. We suggest you amontillados and finos.
